Sea Salt
Many alternative health practitioners advocate the use of sea salt as a healthful seasoning. They believe that Celtic sea salt, Himalayan sea salt and Hawaiian sea salt all contain natural trace minerals that help balance electrolytes. The more sodium you eat, the more magnesium and potassium you need to keep your body in balance. Sea salt naturally contains magnesium and potassium, but these minerals are removed from standard table salt. By using sea salt instead of table salt, you can maintain your electrolyte levels more easily.
Hawaiian Black
Black salt from Kauai contains activated charcoal, which is used as a detoxification agent and an antidote to poisons. Although Hawaiian salt does not contain a large enough quantity of activated charcoal for it to have strong detoxification properties, this mineral may contribute to the salt's reputation as a health supplement. The charcoal in black Hawaiian sea salt gives it a rich, earthy undertone. Most sea salts lose their intensity as they cook, so chefs generally add them to dishes immediately before serving. Hawaiian Red
Red salt from Kauai is infused with alaea, a type of Hawaiian clay. The clay tints the salt red because it contains iron oxide, which serves as an added nutrient. Hawaiian sea salts have distinctive, strong flavors that make them valued ingredients in cooking. The clay in red Hawaiian sea salt smooths the naturally intense taste of the salt and imparts a subtle nutty flavor.
Himalayan Pink
The reason for the special color in Himalayan pink salt has to do with the addition of a number of different minerals present in the salt. In addition to sodium, potassium, iron, magnesium, calcium, and copper are all present in trace amounts. These additional minerals transfer color to the salt, with iron creating the pleasing pink color.
Pacific Natural
New Zealand - Pacific Natural Coarse Sea Salt is harvested from the deep clear waters of the great southern oceans that sweep through Cook Strait between New Zealand's North and South Islands and into the solar salt field. These waters are evaporated using the natural process of sun and wind. Pink peppercorns are used for their sweet, fruity, mildly peppery taste and lovely color and aroma. Unrelated to the black pepper plant, pink peppercorns are actually the dried fruit of a Brazilian tree.

While this lovely spice looks like peppercorns (hence the name), it's not really a peppercorn at all; it's the dried, ripe berries of Schinus terebinthifolius, or Baies rose plant. Also known as Christmas berry, Brazilian pepper tree, pepper rose, and Florida holly-- the pink peppercorn plant is in the cashew family (Anacardiaceae) and is related to the mango as well as poison ivy.
Today's gourmet cooks aren't the first to use pink peppercorns in the kitchen. They are found in the cookbooks of Apicius, an ancient (and extravagant) Roman cook who wrote cookbooks advocating the use of complicated dishes with rare ingredients. It wasn't until the 1900s that pink peppercorns were exported as a spice.
