This rare tea is among the most revered of Chinese teas, produced in the Fuding and Zhenhe districts of its Fujian province and is made solely of plump, downy buds. The leaves are picked only two days a year in the early spring and are processed entierely by hand. It presents a sweet, light fragrance with a subtle fruity flavor & nunances. White teas differ from green teas in that their processing does not incorporate any steaming or pan-firing. The teas are simply shaped, and allowed to wither. Most varieties resulting with leaves that are thin, small and do not have much silver-white hair. It wasn't until 1885 that specific varietals of tea bushes were selected to make white teas. THe large, silvery-white leaves of the Silver Needle came into being in 1891. |
